A great simple combination; sweet scallop wrapped in salty bacon, you need nothing else! So many things are good as a canapé wrapped in thin streaky bacon or pancetta. Using the same principle as below you could also try asparagus or pitted prunes

Scallops wrapped in Bacon

Ingredients Makes 16

  • 16 small scallops without roe
  • Salt and pepper
  • 8 really thin rashers streaky bacon or pancetta
  • Balsamic reduction
  • 16 cocktail sticks

Method

  1. Pat the scallops dry to get rid of any excess liquid with some kitchen paper
  2. Put onto a plate and season with salt and pepper
  3. Cut the bacon or pancetta in half and wrap a piece around each scallop, securing with a cocktail stick
  4. To cook, place high up on a hot grill, turning after 1 1/2 to 2 minutes. You want the bacon nice and crisp with some colour, but you don't want to overcook the scallop
  5. Arrange on a warm serving plate and drizzle (artistically?!) with some really reduced and syrupy balsamic vinegar
