A great simple combination; sweet scallop wrapped in salty bacon, you need nothing else! So many things are good as a canapé wrapped in thin streaky bacon or pancetta. Using the same principle as below you could also try asparagus or pitted prunes
Ingredients Makes 16
16 small scallops without roe
Salt and pepper
8 really thin rashers streaky bacon or pancetta
16 cocktail sticks
Pat the scallops dry to get rid of any excess liquid with some kitchen paper
Put onto a plate and season with salt and pepper
Cut the bacon or pancetta in half and wrap a piece around each scallop, securing with a cocktail stick
To cook, place high up on a hot grill, turning after 1 1/2 to 2 minutes. You want the bacon nice and crisp with some colour, but you don't want to overcook the scallop
Arrange on a warm serving plate and drizzle (artistically?!) with some really reduced and syrupy balsamic vinegar
